Salmon Casserole


It's my boyfriends birthday today and he loves tuna casserole but since tuna is high in mercury I like using alternatives. 

Here I'm using a high quality canned salmon. 
We picked up this tasty salmon at Costco
I like that it's a product of the USA since USA has food standards

I took three cans of this, poured out the water inside 
Mushed them into bits and soaked it with 1 tablespoon of snipped fresh dill, you could use 1/2 tbsp of dried,
and about 1/4 cup lemon juice and stuck it into the fridge until I add it later. 

The lemon and dill will reduce the intense fishy smell and taste. 
Use enough lemon to make sure it's pretty moist and not very crumbly

Next is making the cream of mushroom soup. I like making mine from scratch because most cream of mushroom soups have additives like MonoSodium Glutimate.
