I guess to start my recipe blog is to Jump Right Into it,
My first recipe is my delicious Banana Bread with honey.
This is a Delicious Healthy Dessert alternative
You Will Need:
3-4 Ripe Bananas
1/3 Cup Melted Butter
1 Cup Sweetener
1 Large Egg
1 Teaspoon Vanilla Extract
1 Teaspoon Baking Soda
Pinch of Salt
1 & 1/2 Cup Flour
Here's a Step by Step
When they get freckles is the best
Mash them in a large bowl, I'm using a large fork.
Don't Forget to Preheat your oven to 350 Degrees Fahrenheit
Then add 1 cup of Sweetener, I'm using a powdered Honey.
You can use liquid honey, but remember, that will add extra moisture so you will have to balance it out with a extra 1/4 cup of flour, otherwise it will not cook thoroughly and adding extra time will burn the edges. Which would be ok if you butter the burnt edges with butter immediately after you pull out of the oven at 1 hour and 20-30 min.
Mix in Sweetener until mostly dissolved
Add 1 egg and Mix.
I'm using Happy Eggs, which are humanely handled, free range eggs. Better sources better flavors, happy conscious!
Add 1 pinch of salt,
I like to use Himalayan salt, which because of the color, its not bleached, or processed and holds more minerals and nutrients that are needed in our bodies.
Add 1 teaspoon of Sodium Bicarbonate, any Baking Soda Works.
Sprinkle in Baking Soda and mix thoroughly
Then add 1 1/2 cups flour,
Since I live in a mountainous area at high altitude, I use this great Hungarian High Altitude Stone Ground Flour.
Mix in gradually a bit at a time to ensure its evenly moistened and reduce chunkiness.
Adding the remaining 1/2 cup
Finally, Add 1 Teaspoon Vanilla Extract,
The reason I add Vanilla last, is its generally made with a alcohol, this preserves the vanilla a bit longer than adding it in the beginning.
Mix Thoroughly.
If you haven't already, Prepare your loaf pan, I line mine with aluminum foil for easy clean up and removal of pan, which you'll see later ;)
Spray with non stick and flour or Use my favorite, Bakers Joy, both in one can, light flavor and great for any baked goods.
Add the Banana Bread Mix!
Smooth over top if desired
I'm sprinkling on Crushed Walnuts, but as always, is Optional
For a nice glaze I'm stringing on liquid honey in a zig-zag pattern on the top
Place in center of the oven to get a nice even bake.
Set Your timer for 1 hour!
What it should look like at 30 minutes.. Mmmmm smells AWESOME!
After its done, remove and let cool for at least 10 minutes in the loaf pan.
Here, I'm pulling up the foil from around the loaf pan, careful! It may still be pretty warm!
Pull out the Banana bread by the foil and place on a serving plate and let cool until warm or cool enough to touch, approx. 5-10 min
Here, I'm pulling and flattening the foil away from the loaf
TA-DA!
At this point you should be able to flip onto your hand and remove the foil from under the loaf and back onto the plate.
Now slice and enjoy!
Refrigerate what is left and store in plastic wrap, if any!
